- 3 big potatoes for baking

- A 400 degree oven is recommended. Prick potatoes several times with a fork or knife tip, then bake for about 45 minutes, or until they are soft. Let the potatoes cool a little.
- If preferred, peel the potatoes before slicing them lengthwise into 1/4-inch slices. Place aside.
- Melt three tablespoons of butter in a large skillet over medium-high heat. Add the first half of the potatoes and cook for 4–5 minutes, or until light brown. After adding the first half of the onions and seasoning with salt and pepper, sauté the potatoes for another 7-8 minutes, or until they are golden brown. Remove from the pan and place a warm spot aside. The remaining butter, potatoes, onions, salt, and pepper should be used in the same manner.
- As soon as all of the potatoes and onions are done, add the parsley and serve right away.
